    Oh, and my man Joe made some red AND black beans and rice this week. He does it more Cuban style than anything else, he was taught by a Cuban lady how to make it.

    And it is delicious.

    Very nice list! Although I'm not a man, I'm sure every person in existence, and especially the south, should know to make Chicken and Dumplings. I add fresh crumbled bacon to the dumplings and it's to die for! I'm starting to think of dishes that are fitting for this nice cold weather we have and dumplings is my favorite!

    Although I do agree that fried catfish is to die for! Can you believe my boyfriend doesn't even like it?

    Cuban style red-beans & rice? Sounds really good! Pardon my ignorance, but what makes the dish Cuban?
    I have family roots in southern Louisianan and I'd love to be taught by a good ole' Cajun to make a mean gumbo or jambalaya. I bet it makes a big difference when you can learn the right way from the beginning.

    No-I can't believe that he doesn't like fried catfish...I thought everyone south of the Mason-Dixon line loved to eat catfish...guess I was wrong.

    Did he have a bad experience with them at one time?

    Oh yes, I was under the impression that everyone in the south just loved catfish, too. However, I've been proven wrong a couple times. Not only does my boyfriend not like catfish, my best friend doesn't either. They both don't like seafood in general. I don't get it...

    As far as me cooking...I'm making my famous Chicken and Dumplings sometime this week. Come up to Covington and I'll make ya a bowl. haha

    Tyler: I think I should mention that I'm going to have to strip and refinish all of the wooden crosses I have because none of them come in dark brown. They are all painted in colors like red, yellow, blue, orange and dark green. I really don't have any choice but to refinish them. They came in a bag of 100 crosses that were pre-painted.
